Discover quick 15-minute healthy meals using Aussie pantry staples. These easy, gut-friendly dinners are perfect for busy weeknights and last-minute meal solutions.

If you know me, you know that I am a big believer in prepping meals ahead of time and also planning out your weekly meals. Once in a rhythm, having a plan for the week generally means:

  • You spend less money on multiple visits to the shops

  • You don't have to think about what to cook everyday

  • You end up eating much healthier meals, as opposed to a last minute resort to uber eats or 2 minute noodles.

HOWEVER... life still happens! maybe you thought you were heading out with friends for the night and everyone bailed, or you planned to cooked roast chicken but realised a little bit too late that the chook you thought you had in the freezer was actually just an old carcass saved up for stock.... 😅

So, for those times, I've gathered up a couple of my favourite nourishing dinners that can be thrown together in under 15 mins, using things that are generally found in the freezer/fridge/cupboard of your regular Aussie home.

Easy Noodles + Broth: using a batch of frozen chicken stock or bone broth, cook some rice noodles (or your fave type of noodles), boil some leafy greens such as kale, silverbeet, brocolini or asian greens in the bone broth & boil 1x egg per person. add everything to a bowl and top with kimchi, nori flakes, a drizzle of tamari/soy sauce and chilli.

Tuna Sushi Bowl: using either the pre-cooked rice packets or just your own cooked rice, throw together in a bowl: tuna, rice, avocado, cucumber, grated carrot, nori flakes, kewpie mayo & pickled ginger. Can also use any other veggies that you have on hand/that you like :)

Quick Fried Rice: Using around a cup or so of leftover cooked rice, fry up whatever veg you like (onion, spring onion, garlic, ginger, carrot, zucchini, mushrooms, cauli, brocolli, etc etc) in a hot pan. add the rice, and add a generous drizzle of soy sauce and/or oyster sauce, to taste. Fry up as many eggs as you like in a seperate pan, and assemble together in bowls. drizzle with sriracha or chilli oil.

Garlic Prawn Pasta: using frozen prawns, fry them in a frying pan with 2-3 cloves of chopped garlic and a generous scoop of butter or olive oil. season with salt, pepper, chopped parsley + lemon juice. Add in your fave chopped green veggies (zucchini, green beans, broccoli etc), meanwhile cook the pasta as per packet instructions. strain pasta then toss into the garlic prawns and serve with fresh parmesan and more olive oil, salt and pepper. option to sprinkle chilli flakes on top too!
