Golden Granola

INGREDIENTS:

  • 1 Cup Buckwheat groats

  • 1 Cup Oats

  • 1 Cup mixed nuts (or cashews, almonds or macadamias on their own)

  • 1/3 cup hemp seeds

  • 1/3 cup sunflower seeds

  • 1/3 cup pepita seeds

  • any other seeds you like such as chia or sesame seeds

  • 2 tsp cinnamon

  • 1 scoop protein powder or collagen powder

  • 2 TBSP of honey or maple syrup

  • 2 TBSP melted coconut oil or ghee

  • 1 small banana, mashed or 1/3 cup stewed apple

  • 1 egg

  • 1 tsp vanilla essence

method

  • pre-heat oven to 160 c

  • mix together the maple, oil, vanilla, mashed banana and egg and set aside.

  • put all other ingredients into a large bowl and combined the maple mixture with the buckwheat mixture

  • lay out the granola mix onto a large lined baking tray, in small clumps, but in quite a thin layer.

  • bake in oven for 30 mins, checking at 10 min intervals to make sure it doesn't burn.

  • let cool completely before storing in an airtight container.

  • Serve w fruit + yoghurt :)
